Bright pale yellow in colour with a classic toasty nose of vanilla and coconut with stone fruits and citrus aromas. The palate is well balanced with a creamy mousse and notes of white peach, toast and almonds. A good aperitif or companion for seafood, pastas or paellas.
Made by the `traditional method` of secondary fermentation in bottle and is a blend of Chardonnay, Macabeo, Xarel-lo and Parellada. The Chardonnay is fermented in French oak barrels where it stays on its lees for 4 months, adding complexity to the wine.
The estate is in the heart of the Penedes region, located on a prominent chalky knoll overlooking the village of Mont-Marcal. The estates origins go back to 1975 when Manuel Sancho purchased an 18th century convent and resurrected the vineyards, as well as the medieval passageways hued from the chalk beneath, the perfect site for ageing the wines.
