The palate is filled with gooseberry fool infused with elderflower and hints of summer fruit. (LOCAL) FOOD RECOMMENDATION: A good aperitif or with asparagus, seafood and fish in creamy sauces. ------------------------------------------------------------------------------------------------------------------------------- SHORT HISTORY: Until the 1950’s, Cedric’s grandfather, Raymond, like many farmers in the Touraine, practised mixed farming: a few acres of vines, some cereals and pastures to feed the horses and the other animals. When his father Guy took over the farm in 1968, he gradually moved over to vine cultivation, finally specialising in 1991. Cedric’s arrival on the estate in 1999 confirmed that commitment to the vines and, above all, to wine production. TERROIR: The vineyard extends mainly over the slopes of the north bank of the river Cher overlooking the villages of Thésée and Monthou sur Cher with a southwest to southeast exposure. The steep slopes allow for good natural drainage, needed to produce high quality wines in a semi-oceanic climate. The soil is clay-limestone and shallow clay-siliceous with the presence of flints, known in the region as “Perruches”. The underlying layers are mostly calcareous. VINIFICATION: • Machine harvesting carried out at night to ensure grapes are picked at their freshest • Slowly pressed • Cool ferment • Matured in stainless steel tanks for six to eight months
