TASTING NOTE Intense yellow almost golden colour, white flower aromas are most striking on the nose at first, backed up by dried fruit and hazelnuts. On the palate it is quite a full bodied wine with great persistence especially thanks to the incredible salinity typical of the Ansonica grape and location

FOOD PAIRING Mussels, snapper fish, grouper, most fish dishes

VINIFICATION • Manual harvest • Grapes destemmed • Fermentation in stainless steel vat • Some grapes undergo skin contact for 24 hrs and the rest are direct press • Indigenous yeast/ ambient ferment (temperature control only above 25 degrees) • Spontaneous malolactic fermentation, often very low malic acid • Maturation in stainless steel • Carton filtration at bottling • Fining: variable between vintages (only bentonite, so suitable for vegans)
