TASTING NOTE: A lovely peachy pink colour. There are notes of citrus fruit, followed by peach, then red fruits, with a light dash of fresh mint and garrigue herbs. Perfectly balanced, this wine has a pleasant finish; it is crisp and clean, with pure flavours of pink pomelos and white-fleshed cherries. FOOD RECOMMENDATION: Ideal as an aperitif, John Dory, tapenade, grilled summer vegetables ------------------------------------------------------------------------------------------------------------------------------- TERROIR: vines are planted on hills of sandy clay and limestone with a granitic sub-soil. VITICULTURE: Each task is carried out with care and quality (pruning, debudding and the harvesting of each individual parcel). YIELDS: Limited yields VINIFICATION: • Traditional methods • Stabilised and temperature controlled at 4 to 5oC to keep the pale colour • Skin contact maceration is carried out depending on the grape variety for 3 weeks on fine lees • Light filtration of fine lees then juice is blended • Alcoholic fermentation is temperature controlled at 16 to 18°C • Kept in stainless steel.
