GROWER PROFILE & SHORT HISTORY The winery was established on the site of the ruins of Saint Cirice des Marges church; which was made up of the Priory of Saint Cyrgues (independent from the Psalmody Abbey where monks cultivated their vines). Today nothing remains of the old priory; it was, most likely, seized during the Revolution and since then has changed hands several times. The estate of Château Saint Cyrgues has a particularly rich past life; many people have travelled and given life to this soil and it is found on the route of the famous pilgrimage to Santiago de Compostela. CLIMATE The estate is subject to a strong seasonal rainfall. As in the whole of the Rhone Valley, the mistral blows throughout the year. This is a real asset for the treatment of vines. The Mediterranean climate of the region, particularly favourable to the cultivation of the vine is rainy in autumn, cool and dry in winter and hot and dry in summer.
TERROIRS (TYPE OF SOIL, EXPOSITION, ALTITUDE) The most southerly vineyard of the Rhone Valley, the Saint Cyrgues estate is located in the middle of the long terrace of the Costières, from Vauvert to Saint-Gilles. This south-facing terrace, varying in altitude from 60 to 80 metres, is composed of flint pebbles and clay.
VITICULTURE (TRAINING/TRELLISING, VINEYARD ACTIVITY, YIELDS) Organic viticulture. Yields of 60 hl/ha
VINIFICATION • 2/3 whole bunch, crushed, fermented and straight pressed, 1/3 destemmed grapes, crushed 10 days maceration on skins • Cold settling • Ambient ferment for both portions in separate tanks, with native yeasts • Naturally undergoes malolactic • Matured in 100% stainless • 2g of SO2 added after malo • The two components are assembled • Bottled without further addition of SO2 • No filtration and no fining
