WINE INSPIRATION: Santimenti is an expression of the desire to return to the original, primary, untamed and pure character of the wine, which the terroir and the nature gift us.

WINEMAKING: Created by Mother Nature - hand-picking and hand-sorting of the grapes in the vineyard and when arriving at the winery, gentle pressing of the whole grapes, 100% spontaneous wild fermentation of the juice in stainless steel tanks. No additives are used, the wine is let to evolve naturally avoiding any manipulation. After the fermentation minimal doses of plant-based clarifiers are used. No contact with wood. A minimum quantity of sulphite is added before bottling.

COLOUR: Pale yellow with light green hues.

NOSE: Delicate nose of green apple, cutrus and pea pods.

PALATE: Excellently fresh, with distinct minerality and pronounced notes of lemon and fresh herbs, zippy and moreish finish.

FOOD MATCH: As an aperitif or with Asian and Mexican cuisine, fish, seafood, salads.
